Introduction

Yeast derived beta glucan, also known as yeast beta glucan. As a kind of beta glucan polysaccharide, It has a high molecular weight (several thousands to hundreds of thousands) and exists in the mucus secreted by some microorganisms during the growth process. Modern research has found that the beta-glucan contained in Agaricus blazei is the most abundant and has a high biological activity. Glucan is mainly connected by D-glucopyranose with α, 1→6 bonds, branch points are connected with 1→2, 1→3, 1→4, but with β-1,3/-1,6 the conjugated beta-glucan has the highest biological activity. With the different types of microorganisms and growth conditions, their structures and functions are also different.

Using biological modification method, the degree of polymerization is reduced by β-1,3-glucanase to obtain water-soluble glucan. The solubilization by bio-modified enzymatic hydrolysis can not only obtain water-soluble β-1,3-glucan with a certain molecular mass by controlling the degree of hydrolysis, but also avoid the pollution and safety problems caused by the use of chemical methods, so it has been paid more and more attention.
